Brown Soda bread with mixed seeds

This is a recipe I’ve been meaning to post for a while. Its been a staple in our house since covid landed on our doorstep. Its simple, easy and very comforting. Exactly what we need at a time like this.
If you don’t have the seeds that are listed in the ingredients below feel free to experiment.
Fennel, cumin or caraway would also be a very tasty addition along with any kind of nut.
I change it up all the time to suit what’s in my kitchen.
You can’t go wrong.
Ingredients
- 275g Coarse wholemeal Flour
- 80g Strong white flour
- 1 tsp Bread soda
- ½ tsp Salt
- 1 tsp Brown sugar
- 1 Egg
- 280ml Butter milk
- 30g Linseeds
- 30g Pumpkin seeds
- 30g Sunflower seeds
Preheat oven to 190.
In a large bowl mix all your dry ingredients.
In a separate bowl whisk the egg and milk together.
Combine all ingredients together and mix well. Your dough will be a wet consistency.
Line a bread tin with baking parchment and add your dough.
Place in the centre of the oven and bake for 50-60 mins
Turn out bread onto a wire rack and leave to cool.
